The Chicago Chophouse prides itself in serving the finest in AAA Alberta Angus Beef that is aged to perfection to create the most tantalizing steak that is second to none. Proudly showcased in the foyer of the steakhouse is the entire selection of beef cuts. The Chicago Chophouse uniquely offers customers the option of purchasing these steaks to enjoy at home.

Chicago Chophouse is a casual fine dining steakhouse located downtown on 8th Avenue in the historic Bank of Montreal building.

New co-owners Victoria and Adam, partners in the business and in life, have recently breathed new life into this veteran of the Calgary dining scene. With the help of Executive Chef Kevin Cooper, formerly of Muse, the new team at Chicago Chophouse have completed a freshening of the menu including the focused use of slow food methodologies - locally sourced, organic vegetables and naturally raised beasts.

Herbs and produce from Hotchkiss Farm; hogs from Hog Wild Wild Boar; bison from Olsens High Country Bison; tomatoes from Paradise Hill; mustard from Brassica; potatoes, beets and Carrots from Poplar Bluff Organic; organic, locally roasted coffee from Paradise Mountain Organic Farm.

On the ground level, the lounge provides comfortable booth or high-top seating in a casual atmosphere well suited for watching the game. The glass wine cellar sits just off to the side of the lounge and stocks a great selection of wines from around the world. The Sterling Room, also on the ground level offers private party seating for 20 as well as boardroom and full service private bar. Upstairs, the mezzanine dining room has seating for 70+ and overlooks the lounge.

Lunch time entrees start at $16 with the steaks ranging to $35+

Chicago Chophouse is also Celiac-friendly with many gluten-free options available.

Kevin Cooper, Executive Chef

When did you first develop your love of cooking?
Around the age of 11 grilling on the BBQ for my family

Did you have a mentor getting started? Who do you admire in the restaurant industry today?
My Mentor was Nicolas Desinai he trained me at Priddis Greens Golf and Country Club. He was classically trained in France and set me up with a stag in France and Italy. Chefs I look up to now are Bobby Flay and Mark Mcewan.

From where do you source your ingredients?
From as many local farmers, ranchers and specialty chefs as possible. I also belong to slow food here in Calgary and get out to the farms.

What was the concept behind the menu?
To use at least 80% local and or organic foods that were sustainable to our environment as well as our surroundings. To also keep the image of being a premiere steakhouse in Calgary but also practicing classic techniques with a nouveau edge.

What’s the most memorable meal you’ve ever had?
Most memorable meal I've had was at Ludo in L.A.

Aside from your own, what are some of your favourite restaurants?
Muse and Teatro in Calgary, Bismarck and Suser in Toronto as well as Rain.

What's your favourite ingredient?
Tomatoes

What's your favourite beverage?
Shafer Merlot

Where else in the world have you practiced?
I have worked in Vegas, Italy and France as well as Canada.

What sorts of dishes do you prepare for yourself when you're home alone?
Simple Fresh food classic Italian mixed with French
